Here’s what you need to get started:
- 1 cup white wine
- 2-3 medium to large size tomatoes
- 3 Tbsp butter
- 1/4 of a fresh lemon OR 1 Tbsp of lemon juice
- 1 lb white fish (cleaned & fileted)
- Italian style bread crumbs
- Parmesan Cheese or Pecorino – Romano Cheese
- Seasoning – black pepper, fresh parsley, paprika

Directions:
- In a saucepan, heat up wine, butter, & lemon juice. Adjust these ingredients as you like. This is just a guide and to be honest, I don’t measure out the ingredients exactly and every time it’s a hit. After these ingredients have melted together, set aside.
2. Spray a Pyrex pan (2.2 Qt – 3 qt size will do) with nonstick cooking spray.
3. Line the bottom with thinly sliced tomatoes.
4. Sprinkle Italian style breadcrumbs over the tomatoes, completely cover the tomatoes.
5. Rinse the fish under water, pat dry and place the fish over the tomato/breadcrumbs in a single layer.
6. Pour saucepan mixture over the fish
7. Cover fish with cheese.
7. Sprinkle with fresh parsley, black pepper, and paprika
8. Cook @375 for 20 min., check that the fish flakes, that’s how you know its done.
9. Serve over rice or couscous.

Try this fish next to pasta with Marinara Sauce and serve with a mixed green salad OR on a bed of steamed baby spinach.
