
I promise simplicity... this Sausage and Peppers recipe is only 4 ingredients. Its involved in that you need to change the oven temperature half way through and you need to stir your ingredients throughout for best results. But the work is worth it 🙂 Whats even better is how to cook up your leftovers for a yummy breakfast. Check it out in an upcoming post.
Ingredients
- 2 packages of Italian sausage ( I usually pick up 1 HOT & 1 Mild)
- 1 large jar of mancini peppers (24oz jar)
- 1 large sweet onion
- 3-4 medium size potatoes
- large baking dish (3 Qt size or larger)
- cooking spray
The Steps
- Spray baking dish with cooking spray.
- Cut up sausage (I remove the casing), put in the baking dish.
- Cook at 350 degrees until brown (usually 45 min, but check every 15 min. after the 1st 1/2 hour).
- Cut up potatoes, onions, and peppers (save the liquid from the jar of peppers)… set aside.
- After the sausage has browned, add potatoes and onions, stir together with the sausage and cook at 350 for 30 minutes.
- Increase the temperature to 400 degrees.
- Add peppers and some of the jarred liquid to the sausage, potatoes, and onions.
- Check & stir the ingredients every 20-30 minutes until it is cooked to your liking.
- Sprinkle with cheese: parmesan, mozzarella, or provolone cheese are nice additions.
