
Gas Grill, Charcoal Grill, or Stove Top
Whatever way you choose to cook your steak, the same method applies to checking the steak. Season the steak for a few hours with salt and pepper or Montreal steak seasoning (go light on it) and some olive oil. Put the grill or stove top on medium-low heat. When using charcoal, place the coals in a semi-circle or crescent moon arrangement in the grill so you have areas of high heat and low heat.
Choosing a Cut
With so many cuts to choose from, we go for a Flat Iron because of the price, tenderness, and flavor. The same method will apply (in most cases) to cook a great steak at home.
Delicious Mouthwatering Steak
- First, put steak on the hot portion of the grill to get the classic burnt grill marks
- Then, quickly move it to the lower heat section:
- On a gas grill or stove top, throw the steak on with the heat cranked up for a few seconds. Once the marks are on the steak, just keep it in the low heat section and flip it every few minutes or so. USE TONGS NOT A FORK!
- After five minutes or so the steak should start to shrink a bit.
- You are now looking for two things:
- 1) the blood/juices will start to come out the top of the steak
- 2) When picking up the steak with the tongs, from one end, it will have a slightly springy feeling to it.
- Once you feel that slight spring to the meat, take it off the grill and put it on a plate.
- Let it sit for 7 to 9 minutes … DON’T TOUCH IT AND DON’T CUT IT!
- This should yield a medium rare or rare steak.
- More medium or well done steak, just keep it on the grill a bit longer.

Following these instructions will give you a delicious steak- cooked to steakhouse perfection, every time! Any number of sides will go with a great cut of meat.
Here are some suggestions:
- Mixed Green Salad
- Baked Potato or Twice Baked Potato
- Baked Sweet Potato or Sweet Potato Mash
- Scalloped Potato or Potatoes Au Gratin
- Creamed Spinach
- Corn on the cob
- Vegetable Soup
