Spicy Ahi Poke on Rice Cracker

If you like a spicy kick and sushi or sashimi style dishes, Spicy Ahi Poke is a must try. Poke (pronounced – poh-KAY) is a simple, delicious, protein packed dish you can make right at home. Serve it as a snack or appetizer or as a meal in it of itself. If you are new to Japanese style eating, specifically sushi, this is raw fish eats at its finest! With the right piece of tuna, this tasty morsel is a definite crowd pleaser.

First, gather your ingredients.

  • 3 lbs of sushi grade fresh Ahi (aka Yellowfin Tuna; about 3 big TUNA steaks)
  • Mayonnaise
  • Sriracha
  • A small bushel of green onions (scallions)
  • 1 1/2 Tbsp. of sesame seed oil

Notes on Specific Ingredients & Tools for Spicy Ahi Poke

Tuna

Please note, your TUNA STEAK CANNOT BE FROZEN OR THAWED OUT! Also, be sure to take deep care when selecting the fish.  It should not have a sheen to it, and smell like fresh tuna – not a fishy smell. Make sure the tuna is deep red in color. Furthermore, your tuna steak will be pleasing to the eye.

Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of food borne illness, especially if you have certain medical conditions.

Don’t Forget

Most importantly – CLEAN YOUR HANDS … you will use them as a mixing tool, as its the only way to truly get the mixture on to the fish.

The Process to Making Spicy Ahi Poke

  1. Make sure to WASH YOUR HANDS!!!!
  2. In the small bowl, scoop in 5 or 6 big spoonfuls of mayonnaise, sriracha, and mix well.   * You are looking for a pale, peachy color – the color of A’la vodka sauce * Add more sriracha if you want it spicier – the spice level is up to you  
  3. Set this mixture aside in the refrigerator. 
  4. Next, cut up the scallions with a pair of kitchen shears so that you have tiny rings. Put these on a plate and set aside. 
  5. Rinse each steak with cold water and pat dry with a paper towel.  
  6. Get your sharp knife and cut each steak in to 1″ cubes (digit sized, about the size of the space between your finger tip and first knuckle joint). 
  7. Trim off the white connective tissue – TIP * You may find it easier to use your fingers to scrape this part off. 
  8. Put all pieces in a large bowl
  9. Add sesame seed oil to the fish
  10. Take out spicy mayo mixture from refrigerator & add a few spoonfuls to the tuna. * (You only need enough to lightly coat everything – Add it sparingly as you can always add more.  
  11. NOW MASH IT ALL UP WITH YOUR BARE HANDS! MIX AND MASH HANDFULS OF THE FISH!
  12. Finally, add scallions and continue mashing the tuna and mayo mixture (have a friend throw them in if they’re available, you will be messy). 
  13. When all the ingredients are thoroughly mixed, scoop the mixture into a serving platter or bowl. There you have it! 
  14. Be sure to keep the fish refrigerated until serving.

Final Thoughts

Tuna is a fish packed with protein and healthy fats. However, it should not be consumed everyday because it is high in mercury. That being said, dive in! Serve with crackers, white rice, or eat it as is. Depending on your dietary needs and restrictions, Spicy Ahi Poke may make an excellent addition to your weekly food rotation. We were first introduced to this recipe in Hawaii and it has been a family favorite here on the east coast since. If you have the means, I would highly recommend it.
